While living in Italy for almost 7 weeks now, I have discovered multiple times a dish called pasta arrabbiata. The arrabbiata part comes from the sauce itself, which I learned to be a basic tomato sauce with a special ingredient.....a spice of some sort like chili peppers. However, it appears the most authentic way to prepare an arrabbiata sauce would be to add red pepper flakes to the sauce, not chili peppers. Whichever way it is prepared the main component of an arrabbiata dish needs to be the spice! This is because arrabbiata can loosely be translated to "angry mood" which goes hand in hand with a spicy flavor component of a dish. This is because when you associate spice, usually people become red, which is also related to being angry/spicy.
The main ingredients of an arrabbiata sauce include tomatoes, tomato paste or sauce, parsley, garlic, onion, italian seasonings, and crushed red pepper flakes or chopped chili peppers, whichever is preferred. This is the base to the traditional arrabbiata sauce however there are versions that add cheese like parmesan or meat like sausage. It is solely up to the cook what they want to do.
